Bake Off Photos

1st place in Cookies - Mine!!! Recipe below.


Chocolate and Peanut Butter sandwich cookies:

* FOR THE COOKIE:
* 2 Eggs
* ½ cups Vegetable Oil
* ¼ cups All-purpose Flour
* 1 box Devil's Food Cake Mix

* FOR THE FROSTING:
* 4 ounces Cream Cheese, softened
* ¾ cups creamy Peanut Butter
* 1 teaspoon Vanilla Extract
* 2-½ cups Powdered Sugar
* 3 Tablespoons Milk


to make the cookies:

Preheat oven to 350ºF. Whisk eggs and oil in a medium bowl. Mix in flour and cake mix until well blended. Roll into 1 inch balls (I used the pampered chef small scoop) and bake for 8-10 minutes on an ungreased cookie sheet. Cool completely on a wire rack.

to make the frosting:

In a medium bowl cream together cream cheese, peanut butter and vanilla. Add in powdered sugar and mix until smooth. Add in milk a little at a time until you get the desired consistency.

Put frosting into a ziplock bag and squeeze out air. Snip one corner off and squeeze frosting onto the bottom of one cookie. Place the second cookie on top, bottom sides facing in. Repeat with remaining cookies and frosting.

Mum-Let me know how yours turn out...I tried leaving the peanut butter out..but everyone agreed the filling was too sweet.

Love carrot cake -- and that one in the picture looks very enticing. I cannot bake, but I can appreciate good baking!! :)
